Vada pav – Indian version of burger, must be one of the most loved street foods. Vada is a spicy potato mixture with a coating of gram flour, deep fried in oil. Pav is a special kind of soft bread, almost square in shape.
Ingredients:
4 pav
Batata vada: 1cup gram flour
1tsp cumin powder
1tsp ajwain
2tsp rice flour
a pinch of cooking soda
2 potatoes
1 onion finely chopped
3 green chillies finely chopped
2tsp ginger paste
1/4tsp mustard seeds
1/4tsp cumin seeds
3tsp coriander leaves finely chopped
1/2tsp amchoor powder
1/4tsp turmeric powder
oil
salt to taste
Green chutney: 1cup coriander leaves
1cup mint leaves
2 green chillies
1tsp cumin seeds
1tsp tamarind pulp
2-3 drops of lemon juice
salt to taste
Sweet chutney: 1cup tamarind pulp
1/2cup jaggery
1tsp red chilly powder
1/2tsp cumin powder
salt to taste
Chutney powder: 1cup roasted groundnuts
1/2cup split dalia
2tsp red chilly powder
1tsp tamarind
2-3cloves garlic
1tsp salt
Method: in a bowl add gram flour, cumin powder, ajwain, cooking soda, rice flour, salt and water and make
a thick batter. keep aside.
heat 3tsp oil in a pan, add mustard seeds and cumin seeds, when they splutter add onions and fry
till they are golden brown, now add green chillies,ginger paste,turmeric powder and fry for a
minute. now add boiled and smashed potatoes, salt,amchoor powder,coriander leaves and mix
well. now make 4 lemon sized balls from the above mixture, dip them in the gram flour batter and
deep fry until crisp and golden brown.
grind the green chutney and chutney powder(without water) ingredients separately and keep aside
in a bowl add all the ingredients of sweet chutney and boil till it becomes thick.
now take a pav cut into half horizontally, apply green chutney on one side and sweet chutney on
the other side and place a batata vada in between the pav. serve with chutney powder and fried
green chilly.
