Bhindi Do Pyaza

Bhindi Do Pyaza is a north indian dish. The hindi name for Okra/Ladyfinger is Bhindi and for onions is Pyaz. Do in Hindi means twice or double. Do pyaza denotes presence of double the quantity of onions than that found in any other style of preparation. The curds added towards the end of this dish add more sharpness to this dish. This is the kind of vegetable subzi u would definitely reach out for second and sometimes third serving:)



Ingredients: 3cups sliced bhindi 
                     1 1/2cups sliced onions
                     3 green chillies sliced
                     3tsp ginger paste
                     3/4cup whisked curds
                     1tsp garam masala powder
                     1/4tsp turmeric powder
                     1tsp cumin seeds
                     4tsp oil
                     salt to taste

Method: 1)Heat the oil in a pan, add the cumin seeds and allow the seeds to crackle.
               2)Add the onions, turmeric powder, ginger paste and green chillies and cook till the     

                  onions are tender.              
               3)Add the bhindi and salt and cook over a medium flame till the bhindi is tender.
               4)Add the whisked curds and cook till the curds dry out.
               5)Serve hot with parathas or rotis.

Potato rolls

Feel like indulging in some crispy deep fried goodness? Try these yummy potato rolls. soft patotoes sealed in crispy bread crumbs and dipped in tomato sauce will be a perfect tea time snack. this will be a hit among children. potato rolls are surprisingly easy to make and the stuffing is almost similar to a cutlet. they are great to serve as a party snack or starter.



Ingredients: 1cup boiled and smashed potato
                     1/4cup smashed paneer
                     1/4cup boiled sweet corn
                     1/4cup boiled green peas
                     1/2cup onion
                     1/4cup chopped coriander leaves
                     2 green chillies finely chopped
                     2tsp ginger-garlic paste
                     1tsp red chilli powder
                     1tsp garam masala powder
                     1/2tsp chaat masala powder
                     1tsp amchoor powder
                     3bread slices
                     5tsp corn flour
                     3tsp maida
                     1/2cup bread crumbs
                     salt to taste
                     oil for deep frying

Method: 1)In a bowl mix maida, 3tsp corn flour, salt and water to form a very thin batter.
               2)soak the bread slices in water, squeeze them to drain the water, smash them and 
                  keep aside.
               3)In a bowl add potato, paneer, sweet corn, green peas, onion, coriander, chillies,
                  ginger-garlic paste, red chilli powder, garam masala powder, chaat masala powder,
                  amchoor powder, smashed bread, 2tsp corn flour and salt. mix well.
               4)make equal sized rolls from the above stuffing and keep aside.
               5)spread bread crumbs on a plate.
               6)dip the potato rolls in the batter and roll them immediately on the bread crumbs. 
                  make sure the rolls are sealed properly everywhere or else they may break in the oil.
               7)heat oil in a pan, once it is piping hot reduce the flame and drop all the rolls into the 
                   hot oil and deep fry them in low flame till they turn golden brown.
               8)serve hot with tomato sauce.

Tomato rice

Tomato rice is a very simple, quick and easy rice variety to make with a blend of cooked rice, tomatoes and Indian spices. Tomato rice a very popular dish, especially in the south India. The combination of ripe juicy tomatoes along with aromatic spices is a delicious and tasty treat. There are many versions of this dish but this particular recipe happens to be a personal favorite. Tomato rice is just perfect as a complete meal or light meal or brunch, served alongside with raita and papad.




Ingredients:


1 cup rice
5-6 tomatoes sliced
1 onion sliced
2 green chillies sliced
3tsp ginger-garlic paste
1potato sliced
1/2cup green peas 
2tsp garam masala powder
2tsp red chilli powder
1/2tsp turmeric powder
1" cinnamon
3-4 cloves 
2 cardammom
1 bayleaf
2tsp oil 
2tsp ghee
salt to taste

Method:


 1)clean the rice and keep aside.
 2)heat oil and ghee in a pressure cooker, add cloves, cinnamon, cardammom, bay   
     leaf, onions and fry for a minute. add ginger-garlic paste, green chillies and fry a 
    minute. add tomatoes, cook them till they are soft. add potato, green peas, garam
    masala powder, red chilli powder, turmeric powder and fry for 2min. now add 2cups
    of water, rice, salt mix well and pressure cook it for 3 whistels.
 3)serve hot with onion raita.

Instant Wheat dosa and Ragi dosa

2 Minutes Instant dosa ! Yes it is true. No planning, no grinding, no fermenting, just mix the flours together and start making yummy dosas. When u are tired or do not have the mood to spend much time in the kitchen, this recipe comes handy and it is very healthy compared to other instant food available in the stores. The dosas are  really soft and melt in mouth variety. These dosas goes very well with all kind of chutneys and vegetable kurma.

Wheat dosa:


Ingredients: 1cup wheat flour
                     1cup rice flour
                     1/2cup maida
                     a pinch of cooking soda
                     3-4tsp oil
                     salt to taste

Method: 1)mix all the ingredients(except oil) together with required amount of water. the 
                  consistency of the batter must be little thiner than the dosa batter.
               2)heat the dosa, tava greese it with oil, take a laddlefull of batter and start filling it 
                  in circular motion from outer corners of the tava towards inside, sprinkle little oil
                  cook it for 2min turm it over and cook on the other side also. be carefull while turning
                  the dosa as it may break if done roughly.
               3)serve hot.

            
Ragi dosa:


Ingredients: 1cup ragi flour
                     1cup rice flour
                     1/2cup maida
                     a pinch of cooking soda
                     3-4tsp oil
                     salt to taste

Method: the procedure for making ragi dosa is same as that of wheat dosa, while mixing the 
               batter we are using ragi flour instead of wheat flour.
